Bacon-studded Habanero Pimento Cheese Bites


  Make this the night before you want to serve them; the pepper flavors and heat will really infuse with the cheese. Forget
the toothpicks. You can serve on pretzel crips for crunch and saltiness, Vegetable Thins and on Sweet Potato ‘Good Thins’, perfect to
wash back with a cold beer.

2 cups shredded sharp Cheddar cheese
2 cups shredded Hot Habanero Cheese*
8 oz cream cheese, softened
1/2 mayonnaise
1/4 teas. garlic powder
1/4 teas. onion powder
2 Habanero Peppers, seeded and very finely cholled
   Hot sauce to taste
4 oz jar diced pimentos, drained
4 green onions, green parts only, finely chopped
  Salt and freshly ground black pepper to taste
8 slices cooked Bacon, crumbled
   Pretzel thins or crackers of your choice for serving

1.  In a large mixing bowl, combine all the ingredients** except for the bacon and crackers.
Mix well and set in fridge for 15 mins, or, over night.
2.  Wearing gloves, form 1-inch cheese balls and coat them with the bacon crumbles.
 Serve on the crackers.

 *  Just use reg shredded sharp Cheddar and add a bit extra Habanero
** Found it easier to 1st, leave out the cheese, mix up the cream cheese portion, then add the cheese, slowly working it all
 together.  Got a better dispersion that way when mixing by hand.
